Potato Rosettes

Ingredients

  • 2 medium potatoes, peeled and quartered
  • 1/2 cup shredded Cheddar cheese
  • 1 egg, beaten
  • 2 tablespoons chopped green onion
  • 3 tablespoons sour cream
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper

Directions

  1. Place potatoes in a large saucepan and cover with water; bring to a boil over medium-high heat. Cover and cook for 15-20 minutes or until tender; drain. Transfer to a mixing bowl; mash. Beat in the cheese, egg, onion, sour cream, salt and pepper.
  2. Cut a hole in the corner of a pastry bag or heavy-duty plastic bag. Insert large star tip #409. Fill bag with potato mixture. Pipe potatoes into eight mounds on a greased baking sheet. Cover and freeze for up to 1 month.

Garlic prawns!!

Ingredients

  • 1/2 cup olive oil
  • 1 tablespoon Dijon mustard
  • 3 cloves garlic, minced
  • 1 lemon, juiced
  • 1 orange, juiced
  • 1 teaspoon dried basil, or to taste
  • 2 tablespoons white wine (optional)
  • 30 tiger prawns, peeled and deveined

Directions

  1. In a glass dish, mix together the olive oil, mustard, garlic, lemon juice, orange juice, basil and white wine. Add the prawns, and stir to coat. Cover, and let marinate for 1 hour.
  2. Heat an outdoor grill to high heat.
  3. Thread prawns onto skewers. Grill for 3 to 5 minutes, turning once, until pink.

Boston iced tea

Ingredients

  • 1 gallon water
  • 1 cup white sugar
  • 15 tea bags
  • 1 (12 fluid ounce) can frozen cranberry juice concentrate

Directions

  1. Put water in large pot, and heat on high until boiling. Add sugar and stir until dissolved. Add teabags and let steep until desired strength is acquired. Stir in cranberry juice concentrate, and allow to cool.

Red Pepper Dip

3/4 cup Chopped roasted red peppers

1/2 cup Light mayonnaise

2 tbsp Light sour cream

2 tsp Red wine vinegar

Pinch Granulated sugar

1 tbsp Chopped fresh oregano

1/4 tsp Chopped fresh rosemary (optional)

In food processor puree red peppers, mayonnaise, sour cream, vinegar and sugar until smooth. Transfer to small bowl. Stir in oregano, and rosemary (if using). (Dip can be refrigerated, covered for up to 1 day.) Makes 1-1/4 cups

Di's Delicious Deluxe Deviled Eggs

Ingredients

  • 6 eggs
  • 1/2 stalk celery, finely chopped
  • 1/4 onion, finely chopped
  • 1/4 cup mayonnaise
  • salt to taste
  • 1 dash hot pepper sauce
  • paprika, for garnish

Directions

  1. Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel.
  2. Cut eggs in half. Remove yolks and place in a medium bowl. Mash together with celery, onion, mayonnaise, salt and hot pepper sauce.
  3. Stuff the egg white halves with the egg yolk mixture. Sprinkle eggs with paprika. Chill covered in the refrigerator until serving.

Caramel Banana Bits

Here is a little recipe of my own making.

chopped walnuts

3/4 c. packed brown sugar

1/2 c. butter

1 or 2 bananas

icing sugar

slice banana(s) into 2 cm thick slices, and put onto plate. Then combine butter and packed brown sugar in a sauce pan. Heat over medium temperature, stirring constantly until the sugar is completely mixed with the butter (be carful not to burn it). Once the sugar is completely mixed with the butter, pour the mixture over the sliced bananas. Then add chopped walnuts and icing sugar to taste. Enjoy





Popcorn Munchie Mix

4 cups of popped corn

1 cup small pretzels

1/2 cup shredded wheat cereal squares (such as Shreddies)

1/2 dried cranberries

in a bowl, combine popcorn and other ingredients enjoy.

P.S. If it tastes a bit bland to you, feel free to add seasoning of your choosing.
Hey guys, sorry I haven't posted in such a long time. but I'm back in business now. Here's a new recipe.

Grilled Tofu

1 lb (500 g) of Firm tofu

2 tbsp Soy sauce

1 tbsp Packed brown sugar

1 tbsp Ketchup

1 tbsp Horseradish

1 tbsp Cider vinegar

1 clove Garlic, minced


slice tofu in 1/2- inch (1 cm) thick slices; place in glass baking dish. Whisk together soy sauce, brown sugar, ketchup, horseradish, vinegar and garlic; pour over tofu, turning to coat well. Cover the baking dish and put in refrigerator for 1 hour to marinate, turning occasionally. Place tofu on a lightly greased grill (save the marinade still in dish). Grill on a medium-high temperature (basting with leftover marinade) for three minutes a side (or until browned).

Peanut Banana Wraps.

Smooth peanut butter1/3 cup75 mL
Medium flour tortillas 22
(about 8 inch, 20 cm, diameter)
Small bananas, sliced22
Liquid honey (optional)1 1/2 tbsp.25 mL

Spread peanut butter evenly on each tortilla, leaving 1 inch (2.5 cm) edge.

Arrange banana slices, overlapping, down centre of peanut butter. Drizzle with honey. Fold in sides. Roll up from bottom to enclose bananas securely. Cut in half diagonally. Makes 4 halves.

Berries

berry Me Alive

1 1/4 cups of milk

1 cup of frozen mixed berries

1 cup of raspberry yogurt

1/3 orange juice

2 tablespoons instant vanilla pudding powder

pour all 5 ingredients into blander. Cover with lid. Bland until smooth.
pour into Glasses. Makes enough for 2 people.

Sun-dried tomato dip

Now this is something completely different.

8 oz. or 250g light spreadable cream cheese

2 tablespoons mayonnaise

1 tablespoon Lemon juice

1/4 cup finely chopped sun-dried tomatoes. (reconstituted if dried)

1/4 cup fresh basil chopped.

2 garlic cloves minced.

mix cream cheese, mayonnaise and lemon juice together in a bowl. Add tomatoes, Basil and Garlic and mix well. let sit for at least 1 hour before serving. Serve with crackers or bagel chips.

Banana chocolate Chip Muffins


I'm Trying Something New..... MUFFINS


3 large Bananas

3/4 cup white sugar

1 egg

Mash Bananas. Add sugar and egg

1/3 cup of melted margarine or butter

Add margarine

1 teaspoon baking powder

1 teaspoon baking soda

1/s teaspoon salt

1 1/2 cups of flour

1 cup of chocolate chips

add dray ingredients and bake at 350 for 20 minutes.

makes on dozen.

Baked Apples




This recipe is from the cookbook: The encyclopedia of Creative cooking. pictured above.

Baked Apples

6 apples

6 tablespoons of sugar

2 tablespoons white sugar

2 tablespoons butter or margarine

cinnamon to taste

Wash and core apples; pare one-third of way down, or slit skin around apple about halfway down. Place in baking dish; put sugar and butter in center of each apple. sprinkle with cinnamon; pour water around apples to prevent from sticking. Bake, uncovered at 400 F until tender, 45 minutes to 1 hour.

GUESS WHAT MORE COOKIES.

raisin- chocolate chip oatmeal cookies.



1 cup margarine or butter

3/4 cup white sugar

3/4 cup brown sugar

2 eggs

1 1/2 teaspoons of vanilla

Cream margarine and sugars together in large bowl. Beat in eggs and vanilla.

2 cups flour

1 teaspoon baking soda

1/2 teaspoon salt

Combine dry ingredients in small bowl and blend into wet ingredients.

2 cups quick cooking oats

1 cup raisins

1 cup chocolate chips

stir in oats, raisins and chocolate chips. drop by spoonfuls onto cookie sheet and bake at 350 degrees for 10- 12 minutes.


Guess what tomorrows recipe doesn't involve cookies. YAY

anyway on to the COOKIES!!

Peanut butter cookies:



1/3 cup Margarine or butter

1/2 cup brown sugar

1/2 cup white sugar

1/2 cup peanut butter

Cream together butter and sugars. add peanut butter and mix well.
add egg.

1 cup flour

1 teaspoon Baking soda

1/2 teaspoon salt

sugar for coating

Mix dry ingredients in small bowl and then add to wet ingredients.
Roll into balls and then in sugar. Place on cookie sheet. Press flat with a fork and bake at 350 degrees for 10 minutes.


Be careful of nut allergy's!

The Simple Snack

how to make: Chocolate Chip Cookies.
you will need.
2 1/4 cups of flour.
1/2 teaspoon of baking soda
1 teaspoon of salt
1 cup of butter or margarine
1/2 cup of brown sugar
1 cup of white sugar
2 eggs
2 tsp vanilla
baking instructions:
1. combine butter, white sugar and brown sugar in a large bowl
2. once beaten add in vanilla, eggs and
3. once done. mix dry ingredients together in another bowl
4. dump the dry ingredients into the wet ingredtients and mix
5. then add as many chocolate chips as you want
6. drop into a greased baking sheet and cook for 8 to 10 minutes at 350 degrees
7. YUM
